Lentil Bread

Hi, there! I hope you are having a fantastic day! Whatever wondeful thing you may be doing, I so appreciate you stopping to read this a little less than ordinary lentil bread recipe! I love this bread! It’s a meal on the go, a morning apple butter toaster, and a soup dunker! It’s hearty with a whopping 12g of protein, and helps fuel those busy fulfilling days!

I am gluten free, and I really missed a good loaf of bread I could eat anytime of day and left me feeling nourished inside. This bread does it! Lentils are a wonderful plant source of protein! They contain all 9 necessary amino acids used for fueling your brain, muscles, and metabolism. If you’re like me, and you start to lose all the trains of thought without enough protein; lentil bread can help balance blood sugar levels and keep your energy up!

Lentil bread

•1/2 cups lemtils soaked in water overnight.

•1 cup flour of choice (I use coconut or almond)

•1 teaspoon gluccomannon powder

•6 TB chia seeds

•1/4 cup of flax or to desired consistency

•1 tsp salt

•1 tsp baking soda

•1 1/2 TB vinegar

•drizzle of molasses

Blend all ingredients together in a blender and pour into a greased loaf pan. Bake at 400° for 45 minutes.
